I found the Flatwoods Monster, the Mothman, Spring Heeled Jack (ok, so he's in the game...), any number of Bigfoot monsters (sasquash, yowie), Nessie (and Champ!), and Ahool! awesome!

Roc! Pegasus used to be my favorite flying mount until I discovered it. Also, Jenny Greenteeth, Kappa, Batutut, Chupacabra, Jackalope, Will-o'-the-wisp.
